It has such great flavor, nutty crusty flavor but, not that chewy texture. I love it and will make it with whole wheat most of the time but when I am wanting that almost sourdough flavor and texture I will have to use the white. My mother in law got a loaf of it and she LOVES it. I too LOVE the taste of the fresh wheat berries, as I too grind my own wheat, but also adore the smooth chewey texture of the white...so maybe try half and half next time. The texture was different, not as chewy but very moist and soft for wheat bread. I like the taste better with the wheat but like the texture better with the white.
