Demerara Sugar Rimmed Chai Cream Pound Cake Cupcakes




I was recently inspired by a blog to participate in a cupcake roundup! This is what I came up with:

Pound Cake Cupcakes

1/2 cup butter, room temperature
1/2 c. butter flavored Crisco
3 cups all purpose flour
3 cups granulated sugar
6 large eggs, room temperature
1/2 cup sour cream
1/2 cup milk
1/2 tsp. lemon extract
1/2 tsp. almond extract
1 tsp. vanilla

1. Cream butter, crisco and sugar for 10minutes , or until fluffy and pale.
2. Add eggs, one at a time, waiting until each is combined until adding the next.
3. Add the sour cream.
4. Add the flour.
5. Add the milk.
6. Add the flavorings.
7. Scoop into muffin liners (3/4 full) and bake in an UNheated oven at 315 for 60 minutes.
8. Let cool completely and ice with chai cream icing.

Chai Cream Icing

1# Powdered Sugar
1 pkg cream cheese
1/4 cup shortening (optional, use for stability if in humid weather)
up to 1/4 cup milk
1/2 cup strong brewed chai tea (3 bags to 1 cup boiling water)
1/2 tsp salt
1tsp vanilla
Chai Tea Demerara Sugar and Brewing Tea

Cream the cheese, shortening and sugar, add tea, salt and vanilla. Add milk as needed to desired consistancy. Pipe onto cooled pound cakes and press the edge in demerara sugar for garnish.

Toasted Beer Bread Sammies and Shoppping at Shipshewana!!




Thought I would show you a wonderful way to prepare beer bread, a toasted ham and provolone sammie! Yippeee! Here is the recipe:

Mix:
2 1/2 cups flour
1/2 cup sugar
1 tsp. baking Soda
1 tsp. baking powder
1 tsp. salt


Add 12 oz. beer, the best quality you can afford (We like Rolling Rock, and Amber Bock)

Mix and spread into a prepared loaf pan.

Melt 3 Tablespoons butter and top the batter.

Bake at 375 degrees F for 45-50 minutes. Cool completely before slicing.

(Served cubed as a dipping bread or slice and make as shown!) If I bulk make this recipe I bag up the ingredients at 15 oz. per bag.

Also, I wanted to show the great finds from E & S Sales of Amish-land...Shipshewana, Indiana. I adore bags and bags lined on the shelves and the continual culinary selections they have to offer! Whenever in Indiana I try to make a stop at this store!

Bags of Durum, Semolina, Amish Popcorn, Wheat Germ, Cheese, Oats, Chives, Cilantro, Poppy Seeds, Pumpkin Seeds, Dutch Cocoa and Regular Cocoa and so much more...Gosh I wish we had this store close by!

Here is a receipt from Aldi Grocery as well, I did spent a bit more at Walmart for the Freezer-Kit Cooking for this month. Aldi does not sell ham ($6.25 for 5 #) that I take to the deli counter and have half sliced...or Pork Shoulder (Butt Cut-I don't get why they call this cut the Butt...it isn't ya know!) And toiletries are sometimes cheaper at Walmart. I will post receipts for the Walmart purchases as well...and recipes and pics as taken.

A Week Away

Wow, when you spend a week away from home it sure is hard getting back into the swing of things! I have multiple requests for recipes and plans for Freezer-Kit Cooking. I am working on these currently and will try to have them complete this week. (And hey, thanks for the encouragement!) Below are pics of a Cinnamon/Spice Cream cheese iced roll, (AKA: Cinna-shawns) As you can see for this freezer kit you could roll out the dough, slice and pan and then make the icing and bag it up and freeze it with the pan of rolls for a quick bake, or you could keep all of the ingredients separate; dough balls, bagged spices and icing and defrost and then roll out the day of baking. That is why I LOVE Freezer-Kit Cooking...it is so flexible!

Our family spent a week in Fort Wayne, Indiana...as my husband attended a Symposia at Concordia Theological Seminary. We spent time with friends and our children (who all homeschool) were happy to have a week of socialization and communications (the play time with others), physical fitness (swimming for hours in the hotel pool), critical thinking (via games), vocabulary (through Apples to Apples), writing projects with computer skills (helping friends set up blogs), geography (map skills), consumer math and economics (bargain shopping in the city, as well as watching and discussions on gasoline prices) and just hanging out for a while! See, homeschooling Rocks!

Another wonderful "Field Trip" we were able to make on the way home was an excursion to Amish country via Shipshewanna, Indiana...really a stop off to E & S Sales for bulk food shopping...how I miss this store! It is a wonderful shopping experience for both the "plain" and "fancy" and I loaded up on Semolina, Durum, Oats, Spices, Seeds and so much more! I love the diverse parking lot...with horses and moder "carriages" as well! If you EVER have the opportunity to stop here, DO NOT pass it up!

Freezer-Kit Cooking and Travel

So, we are going to be on the road and all we have to do is pack our cooler with these great meals! I am taking Citrus Maple Ham, Smashed Red Potatoes and look, wonderful homemade chocolate syrup! I will pack a crock pot and the hotel room has a microwave (even if it didn't the lobby usually does). Our family will also enjoy pulled pork with a pomegranate glaze, cheddar and honey ham bread, Pizza pockets and the most wonderful Chocolate Chunk Cookies. Freezer-Kit Cooking is such a wonderful way to save while traveling, our family would spend about $45 to eat out with this kind of meal. We will try to limit dining out to once or twice.














A lot of people are asking for recipes, I just want to let everyone know that I am working on the recipes, freezer cards, and will post a receipt as soon as I can to show how we manage to feed our family SPLENDIDLY within our budget. Blessings, Shawn <><
